I love shrimps and since I am living in the Netherlands it is pretty easy to get good fish....if you know where to buy it!
Working hard on my Master's Degree at the moment , it often has to go fast, especially at lunch time. To make sure that I can go on working smoothly after having some lunch (I am such a busy bee), I am always in search of some easy-peasy recipes.
So today I am going to share my Shrimp Burger (De)light with you, easy and fast to prepare, healthy but insanely tasty and absolutely (a) (de)light!!!

So today I am going to share my Shrimp Burger (De)light with you, easy and fast to prepare, healthy but insanely tasty and absolutely (a) (de)light!!!
To serve some hungry students you'll need:
- nice bread (buns, granary buns, low carb bread or what ever you fancy at the moment)
- fresh cheese or low fat quark
- fresh herbs (chives, parsley)
- brown shrimp (Noordzeegarnalen)
- shallots (if you like them, I didn't have some at home)
- salt
- black pepper
Add your fresh cheese / low fat quark into a bowl. Cut the shallots and the herbs really finely, add them and flavor the mixture with salt and black pepper. Stir well and add some more flavor if you feel like. Cut the buns open (if you have some). It tastes best if the breads or buns are totally fresh with a crunchy crust.
Spread round about two or three teaspoons on one half of the bun or your bread slice and top it with your brown shrimps and some pepper or chives, and the other half of the bun or another bread slice.
If you wanna go for the fancy version you can get as well shrimps, shelled in the Netherlands (and not overseas). That is of course a bit more expensive but they taste better.

To treat myself a bit (yes, that is necessary when you study so hard) I went for some "healthy" lemonade. Healthy because there is no unnatural crap inside. This absolutely tasty Elderflower Pressé from Belvoir Fruit Farms only contains mineral water, sugar, fresh elderflowers, fresh lemon juice and a bit citric acid. It's only better when you make it yourself!
So and now after the delicious break I have to face my Master Thesis again, but to be honest, shouldn't be a problem after this tasty little lunch!
